Summer is almost here (hooray) and it’s time for delicious melons! Cantaloupes are rich in beta-carotene, vitamin B2, and C, which helps boost our immune system. Try out this simple recipe and serve it on the first hot summer day!
Summer Melon Salad, Serves 4
- 2 cantaloupe melons, peeled, deseeded, and cubed
- 1 ruby red grapefruit, divided into segments
- 10 raspberries
- 1 x 2 inch piece of fresh ginger, grated
Combine the melon and grapefruit pieces in a large bowl and leave for 30 minutes to allow the juices to combine. Divide into 4 serving bowls and garnish with the raspberries and ginger. Enjoy!
