In this nutrition webisode I share with you how to make a delicious and nutritious side dish, Amaranth Cauliflower Chia Mash. This dish is loaded with protein, vitamins, and minerals. It contains two powerhouse ingredients, chia and amaranth, which have been shown to contribute to optimal wellness. Here is the recipe:
- ½ cup amaranth grain, rinsed
- 2 C cauliflower, trimmed and cut into florets
- 2 Tbsp chia seeds
- Sea salt
- Cracked black pepper
Place the amaranth in a pan with 1¼ cups of water and bring the liquid to the boil. Reduce the heat to simmer, cover the pan and cook on a low heat for 18–20 minutes. While the amaranth is cooking, steam the cauliflower until it is tender, then, blend it in a food processor until smooth. When the amaranth has cooked mix it through the cauliflower with the chia seeds and season with a pinch of sea salt and cracked black pepper.
