Smoothie of the Day: Macadamia Coconut Smoothie with Mango

A lot of people have been telling me that the flu is going around in their area! Keep your immune system strong with this tropical tasting smoothie, loaded with vital nutrients for health. It’s full of vitamin A, B6, C, E, and zinc. Macadamia nuts are much easier to find in stores these days and they are a great source of iron. If you are a fan of macadamia nuts, you are going to flip when you try this delicious smoothie!

Macadamia Coconut Smoothie with Mango

  • 1 C coconut milk
  • 3/4 C macadamia nuts
  • 1/2 C lightly packed shredded unsweetened dried coconut
  • 1 banana
  • 2 Tbsp chia seeds
  • 1 mango, peeled and fleshed chopped
Combine the coconut milk, macadamia nuts, coconut, banana and chia seeds in a blender and process on high for about 45 seconds (or until mixture is smooth). Add the chopped mango and process again. Serve immediately in a tall glass. Enjoy!
