I love to eat spinach raw in salads, that way I can really benefit from its nutrients. Did you know that spinach was the first frozen vegetable to be sold for commercial use? It originally came from Persia (Iran) and started to be cultivated in North American during the early 19th century. Spinach is full of important nutrients including vitamins B2, B3, C, and E. It is also a good source of fiber, zinc, and magnesium. It has been shown that spinach can help prevent lung, breast, and cervical cancer. It is also known to help fight heart disease. This leafy green vegetable is also full of carotenoids, which the body converts to antioxidant vitamin A to help trigger a good immune response to ward off infections. The vitamin C in spinach helps keep our skin and mucous membranes healthy.
