Smoothie of the Day: Parsnip and Pineapple Smoothie

I know what you are thinking….parsnip and pineapple smoothie? Really? It’s actually pretty good! Pineapples are a great source of vitamin C which helps to keep our immune system strong. It’s also full of bromelain which promotes a healthy digestive system. The carrots in this smoothie have lutein and zeaxanthin, two carotenoids that work together to promote eye health. The parsnips are full of folate, magnesium, fiber, and vitamins B6 and E. Give this smoothie a try!

Parsnip and Pineapple Smoothie

  • 4 oz organic carrots
  • 4 oz parsnips
  • 8 oz fresh pineapple (cut into chunks)
  • 1/2 C rice or coconut milk
  • 1 Tbsp flax seed oil
Wash the carrots and parsnips. Remove the skin and tough core from the pineapple and cut into chunks. Juice the carrots and parsnips with the pineapple. Transfer the juice to a blender, add the rice milk and flax seed oil and process until smooth. Serve in a tall glass and enjoy!
