Not only does it taste delicious, it looks pretty cool too! Avocados are loaded with amazing nutrients to promote a healthy heart, improve digestion, and clear the skin. They are great sources of vitamin K, copper, and folate, which makes them a great food to eat on a regular basis. Organic cage-free eggs are full of selenium, vitamin b12, iodine, and protein. They are also rich in beneficial omega-3 fatty acids. Here’s what you will need to make my tasty Avocado Egg Boats:

Ingredients:

  • 2 ripe Haas avocados
  • 4 organic, cage-free eggs
  • pinch of sea salt and pepper

Preheat your oven to 425 degrees Fahrenheit. Slice the avocados in half, leave the skin on but remove the pit. Scoop out some of the avocado flesh so a raw egg can fit. Crack all the eggs into a bowl. Using a spoon, carefully dish each egg yolk/egg white into the avocado boat. Sprinkle with sea salt and pepper. Do this with all four avocados. Place the avocado eggs boats into a baking dish and make sure they don’t tip over. Bake for about 15 minutes or until the eggs are cooked to your liking. Serve with a side of fresh salsa.
