Recipe: Pumpkin Spice Chia Pudding with Navitas Naturals

Pumpkin Spice Chia Pudding

Got a sweet tooth? Satisfy your craving with this nourishing recipe for Pumpkin Spice Chia Pudding! It’s loaded with amazing nutrients like omega-3 fatty acids, fiber, calcium, and protein. It’s also very easy to make and will stay fresh in your refrigerator for quite some time!

INGREDIENTS:

1/4 cup Navitas Naturals chia seeds

1/4 cup pumpkin puree

1 1/2 cups coconut milk

1 tsp vanilla extract

1 generous Tbsp Trader Joe’s Pumpkin Pie Spice

1 Tbsp raw honey

DIRECTIONS: Put the coconut milk, vanilla, pumpkin puree, pumpkin pie spice, and raw honey into your blender. Process until smooth. Pour the chia seeds into a small mason jar and add the liquid mixture. Secure the lid and give the jar a good shake. Place the jar in your fridge and let the chia seeds gel overnight. Serve sprinkled with cinnamon powder in a small bowl.

It’s important to include nutrient-rich foods in your diet for a variety of reason, a healthy heart being one of them. Each ingredient in this juice has properties that can help support healthy blood pressure and blood vessels. It is loaded with beta-carotene, biotin, folic acid, vitamin C, vitamin E, and calcium. Ginger has been shown to have anti-inflammatory properties and may be useful in a nutritional program for arthritis and fibromyalgia. The blueberries are an important source of resveratrol, a phytonutrient that has been linked to preventing heart disease and cancer. Blueberries are a good source of dietary fiber. Heart Healthy Juice

  • 3 sticks of celery
  • 1 apple
  • 1 handful of blackcurrants
  • 1 handful of blueberries
  • 1/2 inch ginger root
  • 1 Tbsp chia seed oil or flaxseed oil

Juice celery, apple, blackcurrants and ginger root in your juicer machine. Pour into a tall glass and stir in the oil. Enjoy!

Smoothie of the Day: Chia Avocado Pineapple Smoothie

I love avocados and I try to eat one just about every day. This smoothie recipe is a tasty and creative way to really benefit from all of the nutrients found in the avocado. Avocados are also a great source of potassium, a mineral that helps regulate blood pressure. There is also a good amount of digestive fiber in avocados which has been found to lower blood cholesterol levels. The chia seeds in this smoothie are also loaded with fiber, in addition to protein, calcium, magnesium, and potassium. Give this delicious smoothie a try today!

Chia Avocado Pineapple Smoothie

  • 1 C freshly cut pineapple pieces, fresh is best
  • 3/4 C fresh raspberries, bonus points if you picked them yourself!
  • 1 C plain yogurt
  • 1 C raspberry juice
  • 2 Tbsp chia seeds
  • 1 avocado, pitted
Using your blender, process the pineapple, berries, juice, yogurt, chia seeds, and avocado until smooth. Pour into a tall glass and serve. Enjoy!

Smoothie of the Day: Fig Pineapple Coconut Milk Smoothie

I love this smoothie! It’s full of  delicious and nutritious ingredients like figs, pineapple juice, and banana. Figs are one of the most concentrated sources of phytosterols, which can block cholesterol absorption in the body and reduce cholesterol levels. The chia seeds give this smoothie a nice boost of omega-3 fatty acids, calcium, magnesium, potassium, and fiber. The cultured coconut milk adds some “friendly bacteria” to this smoothie, perfect for promoting good digestion. Give this recipe a try today!

Fig Pineapple Coconut Milk Smoothie

  • 1 C pineapple chunks
  • 1/2 banana
  • 5 figs (fresh of dried, just make sure they are un-sulfured)
  • 2 Tbsp chia seeds
  • 1 C cultured coconut milk (I like the kind from So Delicious)

Add all ingredients to your blender and process until smooth. Pour into a tall glass and enjoy!
