Smoothie of the Day: Cucumber Berry Mint Smoothie

It doesn’t have to be summer for you to enjoy a refreshing beverage! This smoothie hits the spot and is full of important nutrients that contribute to optimal health. Cucumbers are a great source of vitamin C and a phytonutrient called caffeic acid, which prevents water retention. They are also a good source of folate, a B vitamin that is important in maintaining a healthy heart. Cucumber Berry Mint Smoothie

  • 1 cucumber (cut in half lengthwise, seeded with a spoon, and chopped into chunks)
  • 1 C blackberries
  • handful of chopped fresh mint
  • 1 C plain yogurt (for a thinner smoothie, add a C of plain kefir in addition to the yogurt)

Put the cucumber in a blender, add the yogurt (and kefir if you are using it), berries, and mint. Process until smooth. You can add some ice cubes to this mixture if you prefer to drink it cold. Serve in a tall glass and enjoy!

Juice of the Day: Cool and Creamy Apple Cucumber Juice

Cool and Creamy Apple Cucumber Juice

  • 1 cucumber
  • 4 carrots
  • 2 apples (I like granny smith)

Add ingredients to your juicer machine and juice. Pour into a tall glass and serve. Enjoy!

Featured Green Smoothie of the Week: Healing Chlorella Avocado Smoothie with Watercress

I LOVE green smoothies and this recipe is becoming one of my favorites. It’s loaded with immune-boosting zinc and other trace minerals to promote optimal healing in the body. The avocado is a good source of vitamin K, a vitamin that is important in proper blood and bone function. Cucumbers are a concentrated source of many nutrients including vitamin A and manganese. I add a handful of watercress to give this smoothie a boost of vitamins A and C and a sprig of mint for manganese. I also add about one heaping tablespoon of chlorella! What is chlorella? Chlorella is an ancient single celled freshwater micro algae containing vitamins, minerals, chlorophyll and many other useful phytonutrients. It is loaded with nutrients like vitamin A,  C, E, and zinc to increase your energy levels while boosting immunity. Give this smoothie a try today!

Healing Chlorella Avocado Smoothie with Watercress

  • 1/2 cucumber
  • 1/2 avocado (pit removed)
  • 1 C plain coconut milk
  • 1 1/2 Tbsp chlorella
  • A handful of watercress
  • A sprig of mint leaves

Add all of these ingredients to your blender and process until smooth. You may add some ice to the mix if you wish to drink it cold. Pour into a tall glass and enjoy!
