I recently made this fun and easy recipe for Pumpkin Quinoa Pudding. Quinoa is rich in nutrients like iron, magnesium, and vitamin B2. It’s also a lot of fun to eat! Pumpkin Quinoa Pudding
- 1 cup quinoa (make sure you rinse it before you toss it into your slow cooker)
- 2 cups coconut milk
- 1/4 cup raw honey
- 1 tbsp pumpkin pie spice (I used the kind from Trader Joes)
- 1 cup pumpkin puree
- 1/4 cup maple syrup
STEP 1: Add all ingredients to your slow cooker.
STEP 2: Give it all a good stir.
STEP 3: Set the heating to low and let it cook for about 5 hours.
STEP 4: Serve the pudding topped with berries, bananas, nuts, or dates!
